The story
At Alquimia - Laboratorio in Valladolid, the kitchen defines itself by disruption, vanguard, a touch of rock and roll, and abundant creativity. The team calls themselves alquimistas – alchemists – who escape the expected while keeping tradition close. As they put it, quoting Ferran Adrià: “Cooking is a language through which one can express harmony, creativity, happiness, beauty, poetry, complexity, magic, humour, provocation, culture.”
The restaurant offers two distinct experiences under one roof. Laboratorio is the Michelin-starred fine dining space, where the kitchen’s avant-garde approach to Modern Cuisine takes centre stage. Here, the tasting menus showcase technical skill and bold flavour combinations in a setting that feels both precise and playful. Crisol, on the other hand, is the more informal, irreverent zone – a gastrobar where the same creative spirit is expressed with a looser, more spontaneous energy.
The wine list is notably interesting, and when the weather allows, outdoor seating provides a relaxed alternative to the dining rooms. Air conditioning keeps things comfortable year-round.
