The story
On a quiet street in Valladolid, La Cocina de Manuel is the kind of restaurant that feels both precise and unhurried. It has earned a Michelin Bib Gourmand, an award that recognises good quality, good value cooking. The distinction sits well here: this cooking is thoughtful without being precious, seasonal without being rigid.
The kitchen works from a carta that changes regularly, driven by what is in season. A recent outside menu included gyozas filled with panceta and langoustine with a cantonese sauce and spring onion; Tudela asparagus with a vegetable vinaigrette and toasted sesame; and a stew of snails. There was also a beef sirloin carpaccio with lemon, basil, anchovy, brioche croutons and nuts, and a confit lechazo neck with mustard parmentier and piquillo chutney. The balance across the dishes leans modern, with clear technique and a respect for the ingredient.
The atmosphere is calm. The dining room, with counter seating available, is designed for focus on the plate and the company. Air conditioning and wheelchair access are in place, and there is outdoor seating for warmer months. The team is attentive, and the approach is direct: seasonal, contemporary Spanish cooking in a setting that does not try too hard.
