The story
In Valladolid’s historic centre, Suite 22 occupies the former stables of the Palacio del Marqués de Castromonte. The building dates from the 15th century, and the restaurant has kept its stone walls and sense of history intact, pairing them with a contemporary décor that feels warm rather than staged. The result is a space that the team describes as “without complexes” – a place where old and new coexist naturally.
Suite 22 opened in November 2011 with a clear philosophy: respect for the product. The kitchen describes its approach as “restless gastronomy,” aimed at curious palates. While the menu changes, the starting point is always the ingredient itself, treated with care before the team lets their creativity run. This is contemporary cuisine that builds on tradition without being bound by it.
The restaurant also operates as a Gin Club, and its wine list leans heavily into Spain’s great fortified traditions. A dedicated section explores the dry, intense wines of the Marco de Jerez – sherry, manzanilla, and the like – sourced from historic bodegas. The Manzanilla en Rama Deliciosa from Bodegas Valdespino is a current pour, and a special “Saca 22” bottling from Sacristía AB is promised soon.
Suite 22 has earned a Michelin Recommended distinction, a nod to the consistency and personality of its cooking.
