Located in Valverde del Camino, this restaurant is a proud showcase of Huelva’s extraordinary larder, from the Atlantic coast to the Sierra. José Duque, trained at the Escuela de Hostelería de Sevilla and with stints at the kitchens of the Roca brothers, Martín Berasategui, and Sergi Arola, brings a refined yet grounded approach to the table.
The menu evolves daily. Starters such as the falso tomate of foie gras and raspberry, or a salmorejo of basil and oloroso sherry with white shrimp, set the tone. The sea delivers: grilled almadraba red tuna, confit cod with crayfish cream, and a dry rice of alistados beans. From the mountains come Iberian acorn-fed pluma, aged beef entrecôte, and a glazed lamb with potato parmentier. Desserts include a creamy chocolate tart, caramel custard, and local poleás of caramelized acorn.
