The story
Apartado in a remote valley of Cáceres, near Valverde del Fresno, Hábitat Cigüeña Negra is a rural hotel for adults that grounds its gastronomy in the landscape. The 220-hectare finca of dehesa and olive grove provides the kitchen with its soul: grass-fed beef, acorn-fed ibérico pork, and the estate's own organic extra virgin olive oil. The restaurant here is an asador – a wood-fired grill – that treats these ingredients with the directness they deserve. Michelin has recognised this honest, place-driven cooking with a Recommended status.
The asador is the heart of the dining experience. Open for lunch and dinner, it serves "bocados de nuestra tierra" – small plates and larger cuts that honour a centuries-old, sustainable landscape. The beef comes from the farm's own herd, the ibérico sausages and bellota hams from pigs that roam the dehesa. The olive oil, from the centenarian manzanilla cacereña olives, is pressed in the on-site almazara (mill) and appears on every table. Guests can also buy these products in the gourmet shop to take home.
Dining here feels like an extension of the estate. The restaurant offers indoor seating with air conditioning, a private room, and outdoor tables with views of the valley. The atmosphere is intimate – the sort of place where the silence of the dehesa settles between courses.
