The story
At Castillería, the sound of crackling flames and the scent of charcoal embers fill the air. Out back, the grill burns continuously. This is the heart of the kitchen, where Juan Valdés, the master asador, works with fire as his sole element, preserving the natural identity of the local products. Every cut of meat is selected with meticulous care.
The restaurant describes itself as an oasis: an unexpected home in the Santa Lucía countryside, a short drive from Vejer de la Frontera in Cádiz. It is a place of water and greenery, fresh air and open skies, with fire at its core. The atmosphere is one of sintonía — harmony between the surroundings, the food, and the people.
The wine list is treated as a living thing, changing and evolving daily. The team has chosen bottles that complement the wood-fired cooking and the spirit of the place.
Castillería’s recognition by the Michelin Guide as a Recommended restaurant reflects the strength of this singular vision: a grill house that is both elemental and refined, rooted in the landscape of southern Spain. It is open seasonally from March to October, and reservations are advised well in advance.
