The story
Since opening in 2015, Eth Bistro Gastro Espai has steadily built a reputation for a style of contemporary cooking that draws deeply from the Mediterranean, specifically the traditions of the Ampurdán region. Chef Albert Jubany leads a kitchen that the restaurant describes as "more mature, daring, elegant, and more Mediterranean than ever," blending the foundations of traditional cuisine with the techniques of modern fine dining. This approach has earned the restaurant a Michelin recommendation for seven consecutive years, a recognition that speaks to the consistency and ambition of the project.
The restaurant’s philosophy is rooted in a strong sense of place. It has been an official ambassador for the Palamós Prawn since 2018, and its menu often highlights seafood and coastal ingredients that feel surprising and welcome in the mountain setting of Vielha. The kitchen works with "the best product," letting the quality of the ingredients drive the creativity of the dishes.
The dining room, designed by local decorator Carmen Caubet, is an intimate and carefully considered space. The main room seats up to 32 guests, with a private dining room available for up to 16. In the warmer months, an outdoor terrace with views over the valley adds another dimension to the experience, seating 22 more guests. The restaurant describes itself as "one of the most photographed spaces in the valley," a testament to its understated elegance.
The menu is offered through a series of curated tasting experiences. Alongside the core Bistronomic Menu, there are dedicated tasting menus that change with the seasons—an autumn mushroom menu, for example, features dishes like ravioli of wild mushrooms and Palamós prawn, or a pigeon from Bresse with wild asparagus. A standout dessert, described as the most requested in the restaurant’s history, is the volcanic crème catalane mousse with violet ice cream and strawberries. Each menu reflects a commitment to creativity and flavor, served in an atmosphere that is both refined and welcoming.
