A Seasonal Proposition

In the centre of Vigo, Enxebre operates without a fixed menu. Instead, the kitchen builds its offering week by week, selecting the best products the local market provides each day. The result is a contemporary cuisine that is firmly rooted in seasonality and sustainability. The restaurant’s name, Enxebre, means “genuine” in Galician – a fitting description for a place that lets the ingredients of the region speak for themselves.

The commitment to local sourcing earned Enxebre a Michelin Bib Gourmand, an award that recognises good-quality, good-value cooking. This recognition aligns naturally with the restaurant’s philosophy: menus change with the seasons, creativity is balanced with respect for tradition, and every plate reflects the immediacy of Galicia’s larder.

The People Behind the Stove

Marcos Rodríguez Rodríguez, born in Vigo, knew his path early. At ten years old he won his first pastry competition and used the prize money to buy a set of knives. After training at the Manuel Antonio hospitality school, he honed his skills at restaurants such as Lera in Valladolid and, in Madrid, at Fismuler, .MX, and Kabuki Wellington. Now he brings that accumulated experience back to his hometown.

Patricia Uceda Gutiérrez, originally from Toledo, carries the aromas of her grandmother’s kitchen – garlic and pepper sofrito for a Castilian soup. She studied at the Escuela Superior de Gastronomía y Hostelería de Toledo, then spent seven years as head of the bar at Kabuki Wellington in Madrid. There she met Marcos, and together they decided to start a new chapter in Galicia. Patricia’s cooking introduces Castilian touches, keeping alive the flavours made with a wooden spoon.

Two Tasting Menus

Enxebre offers two tasting menus, both served to the whole table. The Menú Xenuíno includes four shared starters, a fish course, and dessert, priced at 35€ per person. The Menú Xeitoso adds a meat course, bringing the total to 50€ per person. Drinks are not included. The menus are built around the most characteristic raw materials of the restaurant’s culinary concept, and guests must inform the kitchen of any allergies or dietary restrictions at the time of booking.

The restaurant welcomes children and dogs (with advance notice) but does not provide high chairs or a children’s menu. Groups of six to ten people are served one of the two tasting menus. The kitchen closes at 15:30 for lunch and at 23:00 for dinner, though the dining room remains open a little longer – a sign that Enxebre values the unhurried enjoyment of a meal.
