The story
On San Roque Street in Vigo, La Mesa de Conus is the most personal expression of chef Víctor Conus. The concept is simple and deliberate: a sleek marble bar for twelve guests, where a single surprise tasting menu of nine or ten courses is prepared live before the diners. Two additional tables flank the bar, but it is the counter seating that offers the front-row view of a kitchen built on depth and detail.
The restaurant’s philosophy, which chef Conus calls “cocina de fondos,” is rooted in classical stocks, broths, and bases. Every day, three or four pots simmer on the stove, forming the backbone of dishes that evolve weekly with the season, the market, and the chef’s imagination. The menu always begins with two aperitivos: Ibérico paleta “Doña Lola” and a jamón croqueta that was a finalist at Madrid Fusión 2023. Product and seasonality are the pillars, and the cooking is deliberately unfussy, prioritizing pure flavor.
Chef Conus (born in Barcelona, 1987) traces his culinary journey from Seville to France and back to Spain, where he trained under chefs David Gené and Rafa de Vallicourt. His deep respect for product is visible in every detail. The restaurant sources from local fishing boats in the port of Vigo for exceptional sea bass, turbot, grouper, and spider crab, and from small producers like Vivegreeens for microgreens.
A defining feature is the restaurant’s own 5,000-square-meter vegetable garden, which supplies the kitchen with white eggplant, padrón peppers, faba beans, and heirloom tomatoes in spring and summer. The Ibérico meats come from the family company “Doña Lola,” and cheeses are local—such as the award-winning Savel from Chantada. Legumes, like the chickpeas from Escacena, arrive from their origin. The result is a menu that changes weekly, but signature dishes like fabes with spider crab or tomato in three textures have become staples.
There is no physical wine list. Instead, most guests embrace the chef’s “blind wine” pairing, discovering the bottle only at the end of the meal. The atmosphere is intimate and direct, eschewing trends for a focused, personal dining experience. The restaurant’s contemporary cuisine has earned it a Michelin Recommended award, a fitting recognition for a chef who, with a classical soul and diverse influences, has created something entirely his own in Vigo.
