The story
On Santa Marina street in Zafra, just by the city's old Acebuche gate, Javo and Carmen have brought a new gastronomic project to life. Their restaurant, Acebuche, is the materialization of years of work in this very space, now reinterpreted through the lens of two distinct culinary cultures.
The kitchen here is a fusion of Argentine and Extremaduran traditions, a personal blend that defines the chefs' own story. The focus is on refined technique and excellent ingredients, with nearly everything made from scratch on site. This commitment to quality and value has earned Acebuche a Michelin Bib Gourmand award, a recognition of its well-crafted, accessible cooking.
The menu reads as a conversation between these two worlds. Start with an Argentine empanada filled with stewed veal and chimichurri, or the Vitel Toné Ibérico, a local twist on the classic Argentine starter using acorn-fed sirloin carpaccio. From Spain come dishes like the Leeks with Iberian pork jowl cracklings, cooked sous vide and served with a sweet potato cream, and a hearty tripe stew finished with kimchi sauce. Mains feature grilled meats, including acorn-fed 100% Iberian bondiola and Angus rib, all served with garnishes. Desserts like the orange egg yolk flan and chococake round out the meal.
