In 2016, a group of friends in Zaragoza with very different backgrounds but a shared, outsized passion for food and wine opened Crudo Taberna Gastronómica. Their goal was simple: create a place where you could eat and drink very well, in an informal, relaxed setting. Years later, they have made Crudo their way of life, working every day to offer that space through their dishes and wines.

The kitchen draws a clear line back to home cooking. The team states plainly that their mothers and grandmothers are great cooks, and that traditional home cooking is their primary reference. That foundation, combined with influences they continue to seek out, forms the basis of their small, evolving recipe book. The result is a menu that moves comfortably across cuisines, earning the restaurant its Michelin recommendation. The fusion approach is evident in dishes like the French oyster with tiger’s milk, the Mexican taco of cochinita pibil, and a Mediterranean-style tiradito of sea bass.

The wine list, carefully curated within the constraints of a small space, prioritizes variety and character over commercial labels. Most references are available by the glass, featuring selections from Aragonese DOs like Campo de Borja and Somontano, alongside bottles from Rías Baixas, Burgundy, and the Mosel. The team reads, trains, attends fairs and tastings, and visits as many restaurants as they can, all in service of sharing their passion for gastronomy with their guests.
