The story
Gamberro describes itself as "elegancia e irreverencia de Aragón al mundo." It is a restaurant where you come with an open mind, to enjoy without prejudice. The kitchen's driving philosophy is cocina de autor – author's cuisine – grounded in three pillars: product, technique, and concept. The team is young, passionate, and unafraid to break rules, yet they execute with head and sensatez (sense). Risk is in their DNA, but it is applied with discipline.
There is no à la carte. Gamberro offers only one tasting menu, closed and blind: guests do not know the dishes beforehand. It spans 17 courses and costs €80 per person (drinks not included). The menu is served to the whole table and changes regularly. The kitchen does not accommodate vegetarian, vegan, or gluten-free diets, nor can they serve children outside the tasting menu. Because of the length and nature of the meal, the restaurant advises against bringing babies or young children.
In 2026, Gamberro earned a Michelin Recommended distinction, a recognition of its confident, personal cuisine and the team's commitment to an uncompromising dining experience. The award reflects the clarity of their vision: a modern take on Aragonese roots, executed with technical precision and a certain playful audacity.
Gamberro is open Thursday through Sunday for lunch, and Thursday through Saturday for dinner. Reservations are required, and a credit card is taken as a deposit (charged only if you cancel within 48 hours). The team reconfirms all bookings the day before. For those unable to secure a table, a waiting list is available.
