The story
The Mürset occupies a site steeped in local tradition, dating back 150 years when farmers gathered after the Aarau cattle market to seal deals over a glass of wine. Today the complex integrates a gourmet restaurant, a relaxed brasserie, and a rustic weinstube under one roof. Guests can dine indoors or step onto the sun terrace during warmer months. The layout allows the establishment to host everything from business lunches to elegant birthday celebrations.
Kitchen chief Steffen Eiszner has guided the operation for nearly three decades, crediting his mother for teaching him the fundamentals of cooking early on. He approaches classic Swiss cuisine with a focus on taste experiences that remain in memory, emphasizing refinement through teamwork. The menu structure offers two paths: the traditional Mürset menu or the more creative Balance menu. This dedication to consistent quality has earned the restaurant a score of 12 from Gault&Millau, noting it as indispensable to Aarau's gastronomy.
Diners often encounter refined preparations such as the tuna square wrapped in roasted sesame seeds, paired with fennel carpaccio and horseradish panna cotta. Heartier options include the beef entrecôte served with café de Paris butter or the broiled corn hen accompanied by truffle ravioli and seasonal vegetables. Sweet conclusions feature the gingerbread chestnut mousse with red wine poached pear slices or the orange crème brûlée balanced by lychee sorbet. The extensive wine list covers European selections at accessible price points.
