The story
In the village of Fläsch, within the Klinik Gut, Restaurant PINOT is a deliberate homage to the Bündner Herrschaft region. Chef Sebastian Titz crafts a menu that is both a celebration of local wine culture and a showcase for the area’s finest produce. The kitchen’s philosophy is clear: good, healthy flavour, rooted in the seasonal and the regional.
The space itself reflects this clarity—a setting that lets the food and the surrounding landscape speak. The atmosphere is welcoming, designed for unhurried lunches and the special Thursday evening gourmet dinners. The connection to the vineyards is present in every dish, making each meal a genuine taste of the place.
PINOT’s commitment to honest, high-quality cooking has not gone unnoticed. In 2025, the restaurant received its sixth consecutive Bib Gourmand from the Michelin Guide Switzerland, an award that specifically honours excellent food at a reasonable price. The team takes pride in this recognition, viewing it as a reflection of their passion for regional cuisine and their dedication to every guest.
Beyond Michelin, the Falstaff Restaurant & Beizen Guide 2026 awarded PINOT 3 Gabeln, placing it among Switzerland’s best. The judges highlighted the clear focus on seasonal, regional ingredients and the creative signature of Chef Titz. The restaurant was also named Best Employer in the Employee Hospitality category at the Falstaff Profi Award 2026, underscoring a workplace culture built on trust and appreciation.
The menu at PINOT changes with the seasons, drawing on the best local produce available. The kitchen’s approach is international in technique but deeply rooted in the flavours of the Bündner Herrschaft. From a leisurely lunch to a curated gourmet evening, the experience is defined by the ingredients themselves—sourced with care, prepared with respect, and served with a warmth that makes every visit feel personal.
