Set within the Grand Resort Bad Ragaz, this three-Michelin-starred restaurant is a profoundly personal expression of chef Sven Wassmer’s philosophy. His cooking is a direct dialogue with the Swiss landscape—the forests, the mountains, the clear alpine streams. “The longer I cook,” he says, “the more I leave out.” This minimalist approach, born from a deep understanding of his surroundings, defines the experience.
Wassmer describes his cuisine as purist, seeking to open the “soul of the products” to the guest. The menu, titled “Der Alpensommer,” is a seasonal narrative rather than a static selection. It follows the rhythm of the year, using ingredients at their absolute peak: organic vegetables from a local farm in Pratval, foraged herbs, and mountain dairy. Old preservation techniques like fermenting and drying sit alongside the primal force of grilling over fire. Each dish is a concrete, sensory memory—a bite of a wild sorrel leaf, the sun-warmed taste of an alpine raspberry.
The experience is carefully orchestrated but never rigid. Wassmer’s team works in an open kitchen, and the service, led by his wife and outstanding sommelière Amanda Wassmer-Bulgin, translates the story of each course through thoughtfully selected wines or alcohol-free pairings. The room itself reflects the chef’s aesthetic: strong lines of wood and stone, intimate lighting, and a calm that allows the food to speak. You can choose a six, eight, or ten-course journey, allowing at least three and a half hours to sink into the moment. It is a place that creates new memories by honouring the old.
