The kitchen works with fresh, seasonal ingredients of the highest quality, arranged with a focus on consistency and taste. Each component of a dish contributes to the whole, resulting in what the restaurant calls "grossartig klein" — wonderfully small things that add up to a big experience. This modern cuisine is both precise and playful, earning Roter Bären a place among the Michelin Recommended restaurants.

À la Carte and Tasting Menu

The current menu changes with the seasons. Savoury options might include Breton mackerel with verjus kimchi, shiitake, kefir, and Thai basil, or a golden trout with roasted cream, chicory, orange, tarragon, beetroot, and olive. A veal shank with white asparagus, potato mousseline, wild garlic gremolata, and rhubarb salsa sits alongside a grilled leek dish with green spelt velouté, whey, pear, hazelnut, and parsley root. For those who prefer to leave the decisions to the kitchen, a tasting menu is available in both vegetarian and meat versions.

Bar and Private Events

Before dinner, the bar offers a place for an aperitif, with signature cocktails crafted by a skilled mixologist. The entire restaurant can also be hired for private events, with the team opening outside regular hours for group bookings and special occasions. Several times a year, Roter Bären hosts a Soirée Gourmand in collaboration with select wine merchants, pairing fine wines with the kitchen's small plates for an evening of discovery.

At the trendy "Red Bear" on Ochsengasse, Moha Agouni is the new head chef in the open kitchen. However, the concept remains unchanged: the beautifully presented dishes, from starters to desserts, continue to be consistently portioned, allowing guests to freely mix and match their selections. We savored marinated Swiss shrimp, sliced paper-thin, served with a refreshing chamomile infusion; Japanese radish added a touch of heat, while shallots brought sweetness. The celery soup, featuring cognac, leek, chestnuts, and star anise, was perhaps a bit overloaded with flavors, but the fish course was far more successful: tender confit whitefish fillets were served in an excellent fish broth with bittersweet almond notes, accompanied by skillfully quick-seared orange segments and black salsify. The Wagyu parcel was equally tender, resting in a classic butter-mounted jus and accompanied by an airy parsley mousse and honey-garlic. The meal concluded harmoniously with dark chocolate paired with mandarin and olive oil.
