The story
In the heart of the Aargau wine village of Birmenstorf, Pfändler's Gasthof zum Bären has been a cornerstone of Swiss hospitality for over two centuries. The traditional inn celebrated its 200th anniversary in 2018, and today it operates as a romantic boutique hotel with 16 unique guest rooms, a cozy restaurant and Gaststube, an Orangerie, and a lovely summer garden.
The kitchen is led by chef Rami Gashi, who brings passion and precision to the country cooking that defines the house. The menu reflects the spirit of the inn: seasonal, fresh, and rooted in the region. One standout dish featured on the website is the chef's “Geniale Piemontese Agnolotti” – filled with veal, a nod to the Italian-influenced traditions of Swiss country fare. Another example is the deep-fried breadcrumbed Brie, served with a warm cranberry citrus compote, showing a playful side to the kitchen. The team buys fresh daily, and the menu changes with the seasons.
