At 1,760 metres in the striking basin of Riale, in the Val Formazza, Walser Schtuba is both a refuge and a destination. The Sormani family runs this restaurant with a warmth that feels immediate and genuine. The space itself is described as a "ritrovo gourmand" — a place where tradition and creativity meet, and where the soul of the mountains is present in every detail.

Chef Matteo Sormani leads a kitchen rooted in the landscape. The philosophy is clear: ethics, sustainability, and a deep connection to the territory. Here, country cooking is elevated through careful technique and modern sensibility. Simple, honest ingredients are transformed into contemporary dishes that honour the nostalgic flavours of the past. The menu evolves with the seasons, and the team studies traditional recipes, renewing their textures and combinations.

The restaurant is also a workshop of artisanal products. The Sormani family produces their own bread, panettone, and a seasonal colomba — all handmade, in limited batches. In March 2026, the first artisanal colombe of the season will be baked, marking the arrival of spring. These creations, along with the restaurant’s signature dishes, are the result of constant research, technical skill, and excellent raw ingredients.

Walser Schtuba has earned a Michelin Recommended award, a recognition that aligns naturally with the precision and passion evident in every plate.
