Seasonal plates and techniques

The current menu opens with thinly sliced cured ham from Val d’Illiez served alongside melon water and toasted almonds. Soft courgette flowers follow, stuffed with rillettes made from Fera du Léman and finished with a crisp celery escabeche. The kitchen then moves to handmade Mancini wheat pasta, tossing al dente tubes with red pepper reduction and a light ricotta mousse.
