The story

Tenne in Fiesch: Michelin-Recommended Swiss Cuisine in the Goms Valley

Idyllically located in Gluringen, in the sunny Goms valley, Hotel Restaurant Tenne is a place where “luxuriously simple” is more than a motto – it is the guiding principle. The restaurant is currently open while the hotel undergoes renovation until July 2026, so guests can still experience the kitchen that earned a Michelin Recommendation.

The cooking here is rooted in classic craftsmanship. Fernando Michlig and Christoph work with seasonal, regional ingredients, treating each product with respect so its natural character shines. Their style is at once simple and original, innovative yet delicate. “The basic products keep their identity and their own taste,” the team explains, “merging in harmony with three to four other components.” The result is food that “stimulates the palate and brings the soul to dream.”

Fernando Michlig brings an impressive pedigree. A former member of the Swiss national culinary team (2008–2012), he is a European champion and vice Olympic champion. He is also a member of the Jeunes Restaurateurs d’Europe and a passionate hunter – his wild game dishes are renowned beyond the canton. His partner Christoph complements him with equal dedication.

For those who prefer spontaneity, the restaurant offers Piocher, a concept where the menu is set aside. There, Fernando and Christoph let the market and their instincts decide, crafting a surprise meal that embodies their philosophy: no compromise on freshness, no unnecessary complexity.

The wine culture is equally thoughtful, celebrating Swiss diversity. Whether you choose the classic à la carte or the Piocher experience, every meal at Tenne reflects a deep commitment to honest, flavour-driven Swiss cuisine – the kind that earns a Michelin nod and keeps guests returning to this peaceful corner of the Alps.

Gault&Millau — 13

There is no rush in Goms, and certainly not in the cozy “Tenne,” where local Fernando Michlig has been serving solid, traditional home-style cuisine for years. As always, the duck liver terrine was first-rate, cleverly paired with a finely aromatic spice cake. The vegetarian tartare, by contrast, was less harmonious, failing to truly complement the Sbrinz panna cotta. This was easily offset by the truffled parmesan foam soup, and the main course also impressed: young restaurateur Michlig served a tender and well-spiced beef stroganoff with noodles and winter vegetables. The dessert fell slightly short. In the trio of pear, caramel, and tonka bean mousse, the fruit dominated and there was hardly any trace of caramel. Service was relaxed and very friendly, the wine list features numerous Valais crus, and overall, the value for money is excellent. Michlig can also handle fine dining. He proves this next door at the “Piocher”: a surprise menu for just four tables! “We cook what we enjoy,” says the boss, who is also a passionate hunter. Not surprisingly, the wine is supplied by Valais top winemaker Thierry Constantin.
