The story

Auberge Aux 4 Vents, Fribourg: Historic Manor Dining in the Golden Belt

A Patrician Legacy Reborn

The Grandfey manor houses the Auberge Aux 4 Vents in Fribourg, where international cuisine meets a rich patrician history. Built between the late seventeenth and early eighteenth centuries, the residence formed part of the city's golden belt alongside thirty aristocratic estates. Industrialist Burrus held the property before Res Balzli and Catherine Portmann established the restaurant in 1997. Following a full renovation in spring 2025 that preserves its architectural character, the refreshed venue earned a rating of 12 from Gault & Millau for 2026. Walls throughout the building display numerous artistic works that complement the historic structure.

Philippe Roschy and François Baumann at the Helm

Tenants since 2020, Philippe Roschy and François Baumann manage the kitchen and service with experience drawn from La Brasserie Le Boulevard 39, Hotel-Restaurant Le Sauvage, and Hotel-Restaurant Alpha in Fribourg. Their background includes running the Roschy Butchery, which informs a practical approach to ingredients and quality control. Together with their team, they present an international menu tailored to create moments of connection for guests. The leadership remains active in regional gastronomy associations, ensuring the venue stays aligned with current professional standards.

Standout Plates and Seasonal Refinement

Diners can find reliable highlights such as the lamb rack served with a precise olive and balsamic jus. The dessert program features the tiramisu, prepared with Greyerzer double cream and amaretto ice cream. The international menu covers a range of preparations, balancing classic techniques with broader culinary references. Each plate aims for clarity and balance, reflecting the care taken during the recent restoration of the dining spaces. Guests seeking familiar favorites paired with skilled execution will appreciate the consistent results offered here.

The Park and Terrace

Beyond the refined dining room, the estate opens onto a splendid park that extends the atmosphere into the outdoors. A generous terrace allows visitors to dine amidst greenery while overlooking the grounds that once belonged to Fribourg's elite. This layout emphasizes the connection between the manor's heritage and the natural environment surrounding it. The combination of historical architecture, curated art, and accessible outdoor seating defines the guest experience at this central location.
