In November 2021, Chef Romain Paillereau fell for the historic Trois Tours establishment in the Bourguillon district of Fribourg. His approach is deeply personal: "Today, thanks to our artisans and producers, I cook with my team, drawing on my memories, my encounters, and my past, while looking toward the future." This philosophy is the beating heart of the restaurant.
The kitchen at Des Trois Tours delivers refined French cuisine that changes monthly. Each menu is a fresh composition, built around seasonal ingredients sourced from local producers.
