A Century of Family Craft

Café de l’Union in Genève has served seasonal Nyon cuisine since its founding in 1903. Christopher and Julien Brocard now steer the fifth generation of the family operation, handling the stove and dining room respectively. Their great-great-grandfather established the original establishment, and the current team maintains that hands-on approach by preparing every dish entirely in-house. Seasonal produce from the surrounding region forms the foundation of their daily menu.

The Kitchen Approach

The brothers balance classic French methods with broader Nyon culinary traditions, a style that earned the kitchen a Gault&Millau score of thirteen for the 2026 edition. Midday rotations feature a Japanese-style beef tartare with crispy vegetables and fried rice, while the evening carta highlights an eight-hour rosemary confit lamb shoulder served alongside olive oil mashed potatoes. Grilled sea bass arrives with a citrus vierge sauce and fennel salad, and a Thai curry rotates weekly based on the chef’s current inspiration.

Dining Space and Finishing Touches

Guests settle into a compact interior that opens onto a quiet street-facing terrace. The service remains straightforward and warmly attentive throughout both the midday service and the evening shift. Traditional Nyon cooking concludes with a pan-fried Tomme de la Venoge paired with caramelized hazelnuts, or a red fruit cheesecake topped with fresh berries. An Irish coffee rounds out the night for those preferring a hot finish.
