Chef Stéphane Taffonneau, who trained in respected houses in France and Switzerland, has made this his home. In the cozy bistro on the Geneva lakeshore, Stéphane Taffonneau has been impressing guests for years with a traditional yet skillfully executed cuisine. The chef excelled with the cauliflower and chervil foam soup served with smoked salmon, and the char, prepared like gravlax and accompanied by lemon confit, was wonderfully tender. The beef tataki on bean purée, featuring a seasonal and subtle wild garlic aroma, tasted excellent. The creamy saffron risotto was served with gently cooked squid, while the scallops came with briefly seared leek. The slow-cooked veal chop was a hearty dish, presented with a rich jus and crispy potato straws. The desserts were just as original as they were delicious: a cheesecake with tangy passion fruit jelly, and a meringue with lemon mousse and thyme. A skillfully curated wine list and friendly service completed the experience.
