On the shores of Lake Geneva, inside The Ritz-Carlton Hotel de la Paix, Fiskebar brings a fresh, unfussy approach to fine dining. The restaurant describes its cuisine as libre et créative — free and creative — unbound by tradition or geography. The menu changes every two months, following the rhythm of the seasons and the inspiration of the kitchen.
Leading the kitchen is Italian chef Francesca Fucci, a Puglia native with 25 years of experience in Michelin-starred kitchens. Her cooking draws from her Mediterranean roots while incorporating Nordic techniques like smoking and curing, plus subtle Asian influences. The result is a style of modern cuisine that feels both personal and precise. Fucci is committed to sustainability, sourcing locally and running a zero-waste kitchen.
The dining room is deliberately understated: weathered oak paneling, slate-topped tables, and a wall of handmade ceramic oysters set the tone. It is a relaxed, chic space that opens onto the lake.
The à la carte menu is built around seasonal ingredients. Starters might include grilled green asparagus with mackerel gravlax, or puffed paccheri with spinach and Swiss sérac cheese. Mains range from line-caught sea bass with miso emulsion to aged Swiss Black Angus ribeye. For a deeper experience, the evening Signature Menu — available in four or six courses — showcases the chef’s haute créativité, with a vegetarian option available.
