The story
Il Lago, the Michelin-starred Italian restaurant at Four Seasons Hotel des Bergues Geneva, offers a dining experience that is both refined and welcoming. The cuisine here is Italian at heart, guided by the seasons and the skilled hand of Chef Andrea Messina.
Born in Turin, Chef Messina’s cooking is shaped by family traditions and a career that has taken him through Michelin-starred kitchens in Paris and Dubai. Since joining Il Lago in 2024, he has focused on a menu that is lively and responsive to the changing seasons. “I want to keep our menu lively to match the atmosphere of the dining room and the enthusiasm of our guests,” he says.
The dishes reflect this approach. Signature plates include Bottoni with Mediterranean Garden, Medallion of Sea bass with capers and candied tomato, and a Hay-smoked Risotto with veal stew and caper powder. The desserts, led by Pastry Chef Lyece Major, play with seasonal fruit and unexpected textures, from Candied Ciflorette Strawberries with lemony stracciatella to Poached Rhubarb with verbena and herb sorbet.
The wine program, which earned a Wine Spectator Best of Award of Excellence in 2024, features strong selections from Italy, France, and Switzerland, carefully paired with the seasonal Italian menu.
Restaurant Director Martin Courtois oversees the dining room, maintaining a standard of warm hospitality that complements the kitchen’s ambition. The restaurant is open for lunch and dinner Tuesday through Saturday, with a monthly Sunday brunch during summer.
