Vasseur, who trained in the starred kitchens of Switzerland’s Grand Hôtel du Lac de Vevey, sources ingredients from a network of long-term producer relationships. His approach is shaped by a childhood on a vegetable farm in northern France – respect for the product and seasonality is fundamental.
Vasseur’s cooking is built on “just flavors” (saveurs justes), precise techniques, and original garnishes. The result is a modern French cuisine that lets the ingredients speak. The kitchen offers a market menu that changes daily, a tasting menu, and a “Menu 360” – each designed to showcase the best of the season.
The dining room is elegant and welcoming, with air conditioning, outdoor seating in good weather, and full wheelchair access. The wine list is carefully curated, and the restaurant regularly hosts oenological evenings where Vasseur creates exclusive menus to match featured wines – such as a Châteauneuf-du-Pape from Domaine de Beaucastel.
