The story
At La Cantine des Commerçants, the welcome is pure Basque: Ongi etorri — a phrase that carries the warmth and generosity of a small land nestled between sea and mountains. This is not a promise of ocean spray, but of honest, flavourful cooking.
Chef Didier Taraud has built his career across continents and starred kitchens — with mentors like Gerard Rabey at Le Pont de Brent and Jean Bardet in Tours — before settling in Geneva with his wife Nathalie. His cooking is described as plural, seasonal, and tinted by travel, yet always grounded in simplicity and respect for local producers. The kitchen’s seasonal, modern French cuisine changes with the market, showcasing produce from the lake and the land.
The spring menu, titled Les Heures du Temps, gives a clear sense of the kitchen’s ambition. It opens with a pea cream and wild garlic mousse, moves to Cavaillon green asparagus with kumquat and tarragon, and offers a choice between roasted veal medallions with morels or grilled tuna with piquillos. Desserts include a raspberry sabayon and a rhubarb Pavlova.
The dining room is simple, warm, and generous — an atmosphere that has kept this address in the Michelin guide for ten years. La Cantine des Commerçants is a place for those who love bistronomy and the pleasure of a meal that feels both refined and effortlessly welcoming.
