The story
Since 1995, Le Cigalon has stood as a destination for seafood and French cuisine in Thônex, just minutes from the Geneva border. Chef Jean-Marc Bessire, who trained for 17 years at the Mövenpick Cendrier before taking over the restaurant with his wife Corinne, has made it a place where fish, shellfish, and crustaceans are treated with precise, respectful technique.
The restaurant’s dedication has been recognised with a Michelin star since December 1996—a distinction it has held for over 28 years. Gault&Millau named Bessire “découverte de l’année” in 1997 and continues to rate the kitchen 17/20, keeping Le Cigalon among the top 50 restaurants in Suisse Romande.
Jean-Marc Bessire remains at the stove, now joined by his son Robin as second de cuisine. Corinne Bessire has directed the dining room for three decades, building a wine list that highlights the Geneva and eastern Swiss vineyards alongside carefully chosen bottles from further afield. The kitchen team includes pastry chef Paul de Guillebon, and the atmosphere is one of quiet, professional warmth.
The restaurant’s own tagline, “Père, Mer et Fish,” and its book Gastronomie de la mer en 4 saisons (co-authored with Robin Bessire) make the focus clear: seafood, prepared across four seasons. The menu changes with the market’s best catches, and the kitchen’s long-held star speaks to the consistency of its cooking.
Le Cigalon is open for lunch and dinner, closed Sunday and Monday, with seasonal closures in summer and winter. Outdoor seating is available when the weather permits, and the restaurant offers a wine-pairing option to match the refined, seafood-driven French cuisine.
