The Chef and His Kitchen

L’Aparté at Geneva’s Hotel Royal delivers modern French gastronomy with disciplined seasonal precision. Chef Armel Bedouet arrived from Brittany in 2008, carrying training from Lameloise and Le Chat Botté into his current kitchen. Guests frequently share tables with Bedouet during service, allowing him to explain the sourcing behind each plate. This direct approach recently secured Gault&Millau’s Rising Star title, complementing the restaurant’s Michelin star awarded in 2020.

Signature Creations on the Plate

The tasting menus navigate between land and sea across multiple acts. A standout opening features a delicate sea spider tartlette paired with white miso and marinated cucumber orbs. Subsequent courses ground the meal in alpine tradition, pairing cooked langoustine with Valais dried ham and a smooth butternut reduction. Sweet endings balance textures further, highlighting a chestnut trompe-l’œil made with coconut emulsion.

An Intimate Dining Room

The recently refreshed interior preserves a quiet elegance suited to focused conversation. Synthetic glass panels embedded with pressed flowers line the walls, contrasting with warm oak and suede leather accents. A custom-designed water fireplace anchors one corner of the thirty-cover space. The layout encourages close interaction between the kitchen and guests, reinforcing the restaurant’s reputation for refined French cooking in a relaxed setting.
