The story
In the small Lucerne countryside village of Hildisrieden, Bacchus Bistro & Genussmanufaktur makes a quiet but firm statement: honest cooking, no pretense. Chef Werner Tobler—who, alongside Uschi, runs the kitchen—puts it plainly on his website: “I only eat with cooks who aren’t smooth-talkers. I prefer honest craftsmen.”
That ethos is the backbone of this place. Tobler describes his kitchen as “Swissness à la française with a pinch of the Mediterranean, Italianità, and everything good from the Alpine region.” The cuisine is seasonal French, dictated not by trends but by what the season and local producers offer. He has known most of his suppliers personally for over thirty years. Whole-animal butchery is standard practice here, and vegetables, dairy, and wherever possible, organic ingredients come from the region.
The menu is intentionally small. “Firlefanz und Schnigg und Schnagg” (frills and fuss) you will not find. What you will find, the chef promises, are unexpected taste experiences. This straightforward, quality-driven approach earned Bacchus a Michelin Bib Gourmand for 2026, an award that recognizes good quality, good value cooking.
The restaurant is open Wednesday through Friday from 15:00 to 23:00 and Saturday from 11:00 to 23:00. Sundays are reserved for family celebrations and private events. The space includes outdoor seating and is wheelchair accessible. There is parking. Takeaway is available, and wine pairing is offered.
As of the most recent update, Werner Tobler is taking a break for health reasons. Uschi is cooking from his recipes. The spirit of the place remains: a small, genuine bistro where the food is the message.
