After managing kitchens in Abu Dhabi and earlier roles across Asia, he chose to settle near home when global travel patterns shifted. He now shares the pass with his partner Monica, focusing on small local producers and ingredients that arrive at peak freshness.

Appetizers often begin with playful presentations like the edible garden featuring real soil, wild mushrooms, and young vegetables. Main courses rotate weekly to match what farmers deliver, though recurring favorites include crisp-crusted river crayfish ravioli served with a spiced bisque or charcoal-grilled salmon trout resting on smoked speck dinkel risotto. Sweet finales lean equally into the region, such as a tarragon-scented cream holding a confit rhubarber core alongside blood orange sorbet.
