The story
DéCi Comptoir Gourmand in Lausanne builds its identity around modern bistronomic cuisine, born from a casual meeting over wine between Nathalie Cruchon and Benjamin Deschamps. Cruchon brings fifteen years of service expertise and a winemaking family background to the front of house, while Deschamps channels his training at the Institut Paul Bocuse and three star pastry kitchens into the pass. They launched the project as a pop up at Domaine Henri Cruchon before securing their permanent address near the Bahnhof district in autumn 2024. Their approach treats every dish as a conversation between local producers and global culinary memories.
The evening menu unfolds as a five to seven course journey through contemporary bistronomic cuisine. Diners begin with Tapas’siettes, sharing plates that pair minced malakoff with mustard seed pickles alongside saffron crayfish mousse served in cubed brioche. A squid ink coated egg arrives bathed in vin jaune reduction and brightened with yuzu, while locally sourced fish and Valais rice form their regional sushi interpretation. This terroir focused cooking earned the restaurant a Gault&Millau rating of thirteen points in its first review cycle.
Natural light fills the main dining space, which shifts seamlessly from a lively weekday lunch counter to an intimate evening table. Midday guests choose from rotating seasonal plates featuring one meat, one fish option, and a vegetarian staple designed for efficient yet unhurried service. Afternoon hours slow down considerably, offering a quiet window for single origin coffee, loose leaf infusions, or a pour of nearby Vaudois wines.
