In the heart of Lausanne, on the historic Rue du Bourg, L'Appart offers a distinctive take on modern cuisine. The restaurant describes its approach as “free and responsible” — a kitchen that is spontaneous, product-focused, and deeply respectful of the seasons. There is no static à la carte. Instead, a single menu is built each day around whatever the restaurant’s network of artisan producers and farmers has to offer, making every visit a genuine discovery.

This commitment to quality and sustainability has not gone unnoticed. L'Appart holds a Michelin Green Star for its eco-conscious practices and is recommended in the Michelin Guide, as well as scoring 16/20 in Gault & Millau. The restaurant is also a member of the Slow Food Chef Alliance, further underscoring its dedication to ethical sourcing and biodiversity.

The team behind the experience

The dining room is overseen by Nicolas Bernier, whose goal is to make L'Appart a place “out of time, where one feels good.” He believes the restaurant’s success rests on the talents of its team. In the kitchen, Chef Luis Zuzarte draws inspiration from the variety of modern cooking techniques and new technologies, but his decisions are ultimately dictated by the seasons and the fruits of the surrounding nature. The kitchen brigade includes sous-chef Emmanuelle and several chefs de partie, all working in unison to deliver a cohesive, nightly experience.

What to expect

Dinner is a single, multi-course menu priced at 155 CHF, with a wine pairing option at 62 CHF featuring an eclectic selection of grands crus and biodynamic wines. For those who prefer non-alcoholic pairings, the restaurant prepares five alcohol-free brews on-site for 55 CHF. The menu is adapted willingly for vegetarians and various dietary requirements, though guests are asked to note these at the time of reservation.

L'Appart is open Tuesday through Saturday from 18:45, and your table is reserved for the entire evening — plan on about two and a half hours to enjoy the full menu. The restaurant is located on the first floor of an old building, so accessibility is limited. Pets are welcome, provided they do not disturb other guests.
