Since 2017, Willy and Mara Rossignol have shaped Le Rossignol in Lausanne into a place that reflects their own taste. The couple fell in love with the space and designed it themselves, creating an atmosphere that is elegant and warm but never formal. Chef Willy Rossignol brings a serious pedigree to his own kitchen. His career includes prestigious houses such as the Lausanne Palace, Le Mirador, La Ferme de Marie, and La Bastide de Marie. At Le Rossignol, he applies that experience to a philosophy built on seasonality and sustainability. His cooking in the Mediterranean and classic cuisine style is described as a sensory journey, where flavour is elevated by delicate sauces and garnishes.
The menu changes with the seasons. At lunch, the offer is savoury and light; in the evening, the dishes become more refined and indulgent. A carefully selected wine list accompanies the food.
