The story
In the heart of Lenzerheide, Scalottas - Terroir brings a philosophy of place to the plate. Chef Hansjörg Ladurner practices a kitchen rooted in the season, sourcing ingredients exclusively from producers who share his commitment to natural, sustainable agriculture. The menu, which changes with what the land provides, might feature dishes like sweet potato tortelloni with alpine curry and poppy seeds, or zander from Lago Maggiore, smoked over chestnut wood with fermented fennel and a horseradish ice cream.
This dedication to terroir earned the restaurant a Michelin Green Star, an award recognizing restaurants at the forefront of sustainable gastronomy. Ladurner’s work goes deeper than sourcing. In 2019, he initiated the “BergAcker” project, a high-altitude field where he grows potatoes, barley, and field beans using traditional three-field rotation, all by hand. It is a direct, honest link between the alpine soil and the dining table.
The atmosphere matches the food: a blend of modern elegance and traditional coziness. Guests can choose between the stylish main restaurant or the rustic “Bündnerstube,” both offering a warm welcome.
