They met working side by side in Ascona before merging their professional skills. The Swiss Italian cooking anchors itself in valley ingredients without chasing trends. Pan-fried zander from Lago Maggiore rests on Demeter peas alongside ginger, crispy bacon, and chopped pistachios. Ravioli stuffed with young goat meat carries a light Marsala foam. A copper pot serves Zürcher Geschnetzeltes at lunch, keeping weekday service grounded in familiar comfort.
