The story
At the Hôtel-Restaurant de la Gare in Lucens, Chef Pierrick Suter and his wife Jane-Lise have created what the restaurant calls a “carrefour des saveurs” — a crossroads of flavours. This is not hyperbole: the kitchen, now recognised by the Michelin guide as Recommended, draws diners from across the Broye region and beyond.
The cooking is rooted in classic French traditions, with a focus on beautiful roasted cuts and pristine local produce. Suter describes his own style as “droite et goûteuse” — straightforward and flavoursome. He applies modern techniques only where they enhance, never disguise. The signature lobster, for example, appears three ways: claw, tail, and a spherified bisque, each element retaining its distinct perfume and texture.
The menu changes with the seasons. A recent spring dégustation included poached wild turbot in Chasselas wine, a saddle of lamb with sarriette and polenta, and a rhubarb meringue. Lunch offers a more concise business menu — a red tuna tataki, fillet of Vendée duck, and a choice of cheese or a citrus tart. All menus are built around seasonal, locally sourced ingredients.
The dining spaces match the cooking: a soberly decorated main room, a bold veranda, and a welcoming bistrot. The service is warm and attentive, and the wine list is considered. Four generations of the same family have shaped this address, and the current iteration — under the banner La Table des Suter — celebrates that legacy with quiet confidence.
