In the centre of Martigny, Les Touristes offers a relaxed, deeply local take on French cuisine. The kitchen follows the rhythm of the Valaisan seasons, drawing on nearby producers and wild foraging. The result is a menu that feels intuitive and alive – never stiff, always grounded in the terroir.
Behind the stove are Christophe and Maël, two Valaisan chefs whose cooking is described as "vivante et intuitive." They work with the best meats from committed suppliers and let the market dictate each dish. Their approach is both technical and instinctive, aiming for a sincere culinary emotion rather than show.
The offering changes regularly. A short-lived "Menu éphémère" appears for a few days at lunch, while the Signature menu unfolds in three to five steps. There is also a fully plant-based "Menu Végétal" that highlights vegetables from the region. Recent dishes include veau ciselé au couteau with fir bud and elderflower, gamberi rossi with yellow peppers and wild chervil, and Valais lamb two ways with artichokes and fresh peas. Desserts like the cherry indulgence – wild cherry leaves, crunchy chocolate, egg-yolk ice cream – show the same care for detail.
