In the heart of Bex, just a few minutes from Monthey, Le Café Suisse is the domain of chef Marie Robert. Alongside her associate Arnaud Gorse, she has run this address for over a decade, building a reputation for a style of contemporary, modern cuisine that is both imaginative and grounded. The restaurant’s own website describes her work as “savoureuse, colorée et pleine de création” — a vivid, colourful kind of cooking rooted in fresh seasonal produce.
Robert’s talent has not gone unnoticed. In 2019, GaultMillau named her “Cuisinière de l’année” and awarded her a score of 16/20, a distinction held by only 25 tables in French-speaking Switzerland. The guide praised her “spontaneous cuisine” for gaining the relevance that marks true authorial cooking. More recently, the restaurant earned a spot in the Michelin guide as a Recommended address, confirming its place among the region’s noteworthy tables.
The setting is as distinctive as the food. Housed in a building with a double-revolution staircase and a mezzanine balcony, the high-ceilinged dining room has been soberly reimagined with a contemporary, convivial feel. It is a space that manages to be both characterful and welcoming.
Diners can choose between two tasting menus. “Le menu de Marie” is a surprise menu — the chef invites guests to let themselves be guided — priced at 180 CHF, with optional Swiss wine pairings. For those seeking a deeper exploration, “Le Big menu de Marie” expands the experience at 200 CHF. The kitchen sources its bread from the Charlet bakery in nearby Gryon, and uses Swiss veal and beef as well as French duck, reflecting a commitment to quality ingredients.
Le Café Suisse is open for lunch and dinner from Wednesday through Saturday, offering a place where the spontaneity and pertinence of Robert’s cooking can be enjoyed in a room full of understated character.
