The story
Since 1875, the Taillard family has welcomed guests to this former inn in Goumois, a hamlet on the border of France and Switzerland. Today, the restaurant is part of a four-star hotel, but the kitchen remains the heart of the house. The chef’s cooking is described on the restaurant’s own site as “authentic, flavoursome and with relief, like the Jura mountains around it” — a direct, honest expression of classic cuisine rooted in the ingredients of the Franche-Comté and the Doubs valley.
