The story
Munotblick stands high above the Rhine in Feuerthalen, offering sweeping views of the Munot fortress alongside a menu rooted in market-fresh cuisine and international flair. Chef Daniel Riedener leads a kitchen that prioritizes seasonal Swiss produce while weaving in sophisticated techniques learned during a decade managing the Mad Hatter restaurant on Florida's Gulf Coast. The elegant setting supports a relaxed atmosphere where the young team presents each course with care.
After training in a 16-point establishment and working through the Jura region, Riedener moved to Sanibel Island, Florida, where he successfully led the Mad Hatter restaurant for ten years. A return to his origins brought him back to Schaffhausen and finally to Feuerthalen, where he established Munotblick as a personal project. His philosophy centers on market-fresh cuisine that respects regional seasons while embracing global influences. The kitchen frequently explores fermentation and plant-based dishes, ensuring every plate introduces guests to new flavor combinations.
The kitchen builds complex flavor profiles around umami, highlighted by the signature Umami hoch 3 dish that combines dashi essence with egg yolk and grated Belper Knolle. Another notable creation involves buffalo ricotta ravioli finished with the same Swiss cheese, demonstrating how Riedener integrates local ingredients with Asian accents. Protein-focused plates include Swiss Premium Beef Picanha grilled on charcoal with rosemary jus and bear garlic mustard, or trout confit in buttermilk broth served with fregola sarda. Plant-based diners can order braised celeriac steak accompanied by fried herb chanterelles and distinctive potato ravioli.
The restaurant secured 15 points from Gault&Millau, a recognition driven by the harmony between the kitchen's creativity and the setting overlooking the Rhine valley. Reviewers commend the balanced execution of dishes ranging from simple vegetable preparations to intricate meat courses, all supported by a thoughtful wine selection. Beyond the daily service, Munotblick organizes immersive Food and Wine Academy sessions on its terrace, where guests participate in live cooking workshops and tastings. These events underscore the team's dedication to sharing knowledge and experimenting with new culinary frontiers.
