For many years, Manuel Reichenbach competed at a high culinary level in the proud patrician house right in the heart of Trun. Now, the effort involved in this type of gastronomy has become too great for him, and he increasingly places high-quality products from the region, yes, even from his own garden, at the center of his menu. The list has shrunk considerably: experimental yet grounded, but still creative and perfectly crafted dishes, charmingly served by his wife Yulia. The correspondingly substantial amuse-bouche came just at the right time after our long drive: a slice of rustic Alpine pork terrine and a wonderfully airy cream puff filled with cheese. A successful start to the meal was a red pepper soup with basil croutons and goat cheese, served alongside a portion of homemade pie and pickled vegetable strips. The crispy confit duck leg, plated over champagne cabbage and plums, was also excellent. But the true highlight was a sharply seared, glazed dorade fillet with beetroot purée, glazed onion, and candied lemon. On the same level, perfectly cooked slices of ribeye steak from a local Hereford beef arrived at the table with potato gratin and glazed chicory. As ever, the cheese trolley featuring around 30 ideally aged specialties remains one of the most impressive for miles around. A delicate finish was provided by a lemon tart with mascarpone ice cream. We have adjusted our rating to reflect the new concept; it now stands at 15 points. Nevertheless, we can still wholeheartedly recommend a visit to the Reichenbachs.
