The story
On the shores of Lake Geneva, in the Belle Époque surroundings of Vevey’s Hôtel des 3 Couronnes, Kaiseki by Manabu brings the precision of Japanese kaiseki-ryori to the Swiss Riviera. The restaurant earned a Michelin Recommended distinction for its interpretation of this multi-course tradition, where seasonality and visual harmony are paramount.
Scottish chef Alastair Long leads the kitchen, drawing on classic Japanese techniques while introducing his own creative touches. The menu changes with the seasons, built around the freshest local and imported produce. The Kaiseki Menu, at 220 CHF, opens with an otoshi of three signature surprises, then moves through dishes like chu toro with coffee ponzu and puffed rice, hamachi with dongchimi and jasmine-strawberry jelly, and a deluxe omakase selection of sushi and sashimi that includes toro. Grilled A5 Kagoshima wagyu appears with a Laphroaig 10-year reduction and sancho pepper, while a langoustine course comes with dongchimi espuma, apple and leek. Desserts such as apple & shiso sorbet and yuzu mousse with raspberry puree and meringue close the meal on a bright note.
The dining room overlooks the lake, with a terrace for warmer months and a bar for pre-dinner drinks. Private dining is available, and the restaurant is wheelchair accessible, family-friendly, and accepts pets. Valet parking and a private outdoor parking lot are on site. Kaiseki by Manabu serves a tasting-menu-only experience, with three options: Kaiseki, Connaisseur, and Signature / À La Carte.
