The story
L'Auberge de L'Ours in Villars-sur-Ollon anchors a bistronomic tradition that stretches back to a logis recorded in Vers-l'Église as early as 1621. The current stone building dates from 1833, when the Commune d'Ormont-Dessus constructed the inn. Emilie and Alain Figuet moved here from Geneva to manage the property, curating a refined dining environment within the halls. These spaces have undergone several renovations over time, preserving the character of an abode that continues to serve travelers deep in the valley.
Alain Figuet executes his bistronomic vision with clear technical precision. Locally raised beef arrives crisp and sliced into fine strips, paired with a peanut sauce and house-made chips. The fish course demands engagement; the chef carves the plaice tableside before dressing the fillet with nutty parsley butter. Sweetbreads appear cooked to order alongside leeks and Anna potatoes, while the dessert menu offers a lemon tart balanced by tarragon-yuzu gel and a mandarin sorbet.
The commitment to high-level bistronomy resonates throughout the venue. Gault&Millau awarded the restaurant 14 points, praising the couple for delivering excellent fish and meat cuisine in a remote mountain location. Emilie Figuet ensures the service remains warm and approachable, matching the convivial spirit of the inn. Guests can also extend their visit by staying in one of the six modular rooms available on-site.
