The story
At Rosa Pulver in Winterthur, the team never stops tinkering, discovering, learning and testing. They serve only what feels good, what surprises and delights – never what bores them. Dressed in a suit or jogging pants, guests are equally welcome. For them, high enjoyment has nothing to do with silver cutlery or quiet piano music. Their modern cuisine is built on produce from small, biodynamic farms as close to home as possible, often foraged by the team themselves. They cook whole ingredients: from nose to tail and root to leaf.
This ethos earned the restaurant a Michelin Recommended distinction, a recognition that aligns perfectly with their no-nonsense approach to quality.
The menu changes constantly, shaped by the seasons and the kitchen’s ceaseless experiments. Guests can order individual dishes from a list of snacks, starters, mains, sides and desserts, or choose the “Chef’s Choice” five-course surprise menu (available with meat and fish, vegetarian, or vegan). Recent highlights from the kitchen include a cold-smoked alpine zander ceviche, cabbage tacos filled with the whole vegetable, and a black pudding from Duroc pigs. For dessert, strawberries and elderflower meet fennel in a composition that captures the warmth of summer evenings.
Each summer, the Rosa Pulver team packs up its entire restaurant and moves to the Bungerthof in Berg am Irchel, a biodynamic farm they work with closely. Guests wander through fields and between beds, enjoying food and drink stations before settling in the garden of a nearby bird of prey station for a surprise menu that showcases the farm’s produce. The event is a testament to their commitment to place, season and community.
The atmosphere is relaxed, the ingredients are whole, and the cooking is unfussy yet deeply considered. Rosa Pulver proves that modern cuisine can be both inventive and honest.
