The story
The story of Trübli begins long before the current team. First mentioned in 1785 as the “Wirtshaus zur Traube” at the Untertor, this restaurant near Neumarkt has been a fixture of Winterthur hospitality for centuries. After decades under the well-known Trübli innkeeper Ursi Bichsel and her son Daniel Leuenberger, Alexander Bindig took over in April 2019. Now, after many wonderful years at the original address, the team has closed the Bosshardengässchen location but is not saying goodbye for good. In May 2026, they will reopen at the Café am Römerholz, near the Museum Oskar Reinhart, under the name Reineke.
Owner Alex Bindig has been in hospitality since childhood, working in fine dining and later shaping the concept at Restaurant Bunter Hund. He is the face of the house, connecting kitchen and service. Chef Nicolai Pfisterer started as sous chef and now runs the kitchen with calm precision. Together they run a tight, personal operation.
Dinner at Trübli is built around a single, nightly Menu Surprise. The kitchen adapts to the season and to the guests’ preferences – allergies and intolerances are noted at reservation and the menu adjusts accordingly. Three courses cost CHF 95 (vegetarian option CHF 85), with optional extras: an additional course (CHF 24), a dessert (CHF 20), or a selection from the Jumikäserei (CHF 22). A wine pairing is available, and the wine list itself is a point of pride: 140 labels focused on German wines, sourced from producers the team knows personally, stored in their own “Deutsche Weinbotschaft” cellar.
This seasonal, ingredient-driven approach has earned Trübli a Michelin Recommended distinction for 2026 – a recognition that reflects the precision and warmth of the cooking.
Though the physical restaurant is in transition, the spirit remains. The team’s gratitude to their regular guests is genuine, and their commitment to honest, seasonal cooking and a thoughtfully curated wine list will carry into the next venture. For those who have not yet visited, the closure offers a moment to anticipate what comes next. For those who have, the new address will feel like a familiar welcome.
