Menu highlights include Scottish scallops with Luma pork belly, beetroot, and Doppelrahm de Gruyère AOP; Miéral pigeon with kale, salsify, Zermatt rowanberries, and Piedmont hazelnuts; and a trio of Swiss Wagyu beef with Albula valley mountain potatoes, stachys, tardivo, and winter truffle.
