The story
Cervo Mountain Resort in Zermatt anchors its acclaimed Italian kitchen at the foot of the Matterhorn. Founders Daniel and Seraina Lauber opened the first chalet here in December 2009, designing a base camp that blends rough timber with polished stone. A major renovation in late 2020 expanded the site to seven lodges and introduced the Ātman Mountain Spa. The original hunting lodge aesthetic now supports a broader philosophy of mindful travel and regenerative energy use.
Chef Bogdan Bega leads the Madre Nostra, where his approach to Italian cooking prioritizes locally sourced produce. The menu highlights handcrafted pasta shapes like ricotta and egg yolk-filled ravioli served on truffle butter with shaved black truffle. Pan roasted regional veal fillet arrives alongside a creamy risotto that balances richness with earthy undertones. Guests finish with a dense chocolate mousse folded with toasted hazelnuts and dark cherries.
Warm wood paneling and low lighting define the Madre Nostra dining room, which maintains an elegant alpine chic throughout the year. A forty-page wine list runs alongside straightforward Valais cheeses at the adjacent Ferdinand restaurant and orientally inspired vegetable plates at the Bazaar. Large sun terraces draw crowds during winter months when live bands and DJs play until late. Gault&Millau awarded the property fourteen points this year for its consistent execution and attentive service.
