The story
Colani Bistrot opened in 2020 as the welcoming, more casual sibling of chef Paolo Casanova’s gourmet restaurant Stüva Colani. Located in the small Engadin village of Madulain (just outside Zuoz), this bistro earned a Michelin Bib Gourmand in 2024 – an award that celebrates excellent food at a reasonable price. Michelin’s inspectors noted the “good quality, good value cooking”, and the bistro wears that recognition with pride.
The menu changes with the seasons and draws on local Engadin products, prepared with a Mediterranean touch. At lunch you’ll find light dishes; in the afternoon, the kitchen turns out small snacks, delicate pastries and cakes. A standout is the house-made gelato artigianale – a creamy, authentic Italian-style ice cream that reflects the chef’s roots.
The bistro’s cocktail bar is run by a barman who creates an intriguing selection of drinks using wild herbs and spirits, many of which are distilled in-house using a rotary evaporator. These unconventional aperitifs can be paired with finger food or a full meal, making for a memorable evening.
Open seven days a week, Colani Bistrot is designed for spontaneity. Whether you stop by for a quick lunch, an afternoon coffee with patisserie, or a leisurely dinner with a cocktail, the atmosphere is relaxed and genuinely hospitable. The space is a comfortable, unpretentious foil to the fine-dining experience upstairs – yet it shares the same commitment to quality ingredients and careful preparation.
For those exploring the Engadin valley, Colani Bistrot offers a taste of chef Paolo Casanova’s philosophy without the formality. It’s a place where Mediterranean flavours meet Alpine produce, and where a Bib Gourmand award is not just a plaque on the wall but a daily promise.
